Healthy carrot cake with cream cheese, an ideal dessert for autumn and special celebrations.
Ingredients (for 12 persons)
For the cake

- 350 g of clean carrots
- 3 eggs medium
- 200 g sugar
- 1 teaspoon vanilla essence or vanilla flavor
- 175 g of coconut oil
- 350 g of cornstarch flour
- 16 g of baking powder
- 2 teaspoons of sodium bicarbonate
- 2 teaspoons cinnamon powder
- 1 teaspoon of powdered or freshly grated ginger
- 30 g raisins or candied fruit (optional)
- 30 g chopped walnuts (optional)
- 1 pinch salt
For the filling

- 50 g of butter at room temperature
- 350 g of powdered sugar (you can reduce the amount to taste or substitute sweetener)
- 1 teaspoon of lemon juice
- 150 g cream cheese spread
- Cinnamon powder for garnish (optional)
Preparation
- Prepare the carrots: Place the peeled and chopped carrots in the Thermomix mixing bowl and puree for 8 seconds at speed 5. Reserve.
- Whisk the liquid ingredients: Add the eggs, sugar and vanilla. Mix during 30 seconds at speed 5 until a homogeneous mixture is obtained.
- Add the oil and carrots: Add the coconut oil and the reserved carrots. Mix during 5 seconds at speed 4.
- Add the dry ingredients: Add the flour, baking powder, baking soda, cinnamon, ginger, raisins, walnuts and pinch of salt. Mix during 3 seconds at speed 6.
- Prepare the baking: Pour the dough into two previously greased molds or in a single large pan if you prefer a taller cake.
- Bake the cake: Bake in a preheated oven at 170-180°C with heat up and down during 35 to 45 minutes if you use two molds, or between 60 and 70 minutes if you bake in a single pan.
- Check for doneness: Insert a skewer in the center of the cake. If it comes out clean and dry, the cake is ready.
- Allow to cool: Remove from the oven and let cool completely on a wire rack before unmolding.
- Prepare the stuffing: Place all the filling ingredients in the Thermomix mixing bowl and mix for a few seconds. 20 seconds at speed 4 until a smooth and creamy cream is obtained.
- Assemble the cake: Place a sponge cake base, spread half of the cream and cover with the second layer. Finish by covering the surface with the rest of the filling.
- Garnish and serve: Sprinkle cinnamon on top or decorate to taste before serving.
