Cheese rolls with tomato confit—the perfect dish for a gourmet appetizer at family gatherings

20 cl from Sojade Cuisine (a plant-based cooking alternative).

200 g made from fresh organic goat cheese.

120 g candied tomatoes (marinated in olive oil and drained).

6 sheets made from organic bricks.

1 egg yolk beaten egg.

1 bunch fresh mint (preferably peppermint).

1 pinch of salt.

1 pinch of freshly ground pepper.

Preparation

Prepare the stuffing: Pour the plant-based alternative into a bowl, add the fresh goat cheese along with the confit tomatoes cut into small pieces, and mash everything together with a fork.

Season the mixture: Add the finely chopped fresh mint, salt, and pepper, and mix again until the mixture reaches a fairly thick consistency.

Preheat the oven: Turn on the equipment and let the temperature stabilize at 180°C at a uniform temperature.

Cut the bases: Unfold a sheet of brick pastry and carefully cut it into four equal parts.

Portioning the dough: Take the equivalent of a good teaspoon of the cheese mixture and place it right on the rounded edge of each quarter of a sheet of brick pastry.

Shape and seal: Fold the sides toward the center and roll the brick pastry sheet tightly into a cylinder; seal the end by brushing it with a little beaten egg yolk.

Bake the rolls: Place all the pieces on a baking sheet and bake in the oven for 10 to 15 minutes until it reaches the desired golden, crispy texture before serving.
