Vegetable pasta with creamy peanut sauce—an ideal dish for healthy lunches and light dinners

 

 

Ingredients (for 4 persons)

    • 200 grams organic lentil pasta (you can also use seaweed pasta or any wheat-free alternative)
    • 1/2 cup made from natural peanut butter
    • 1 cup of water
    • 2 tablespoons low-sodium soy sauce
    • 2 tablespoons of rice vinegar
    • 1 tablespoon coconut sugar or another natural sweetener
    • 2 teeth chopped garlic
    • 1 tablespoon ground ginger

 

Preparation

  • Cook the pasta: Cook the lentil pasta according to the package instructions until it's al dente. Drain and set aside.
  • Prepare the sauce: Add the peanut butter, water, low-sodium soy sauce, rice vinegar, coconut sugar, minced garlic, and ground ginger to a saucepan.
  • Mix the ingredients: Stir constantly over medium heat until the sauce is smooth, creamy, and lump-free.
  • Thicken the sauce: Cook for a few more minutes until the sauce thickens slightly and becomes more consistent in texture.
  • Add the pasta: Add the cooked lentil paste to the saucepan and mix well so that it is completely coated with the sauce.
  • Serve immediately: Plate the pasta while it's still piping hot and serve immediately to enjoy its full texture and flavor.
