Sweet Potato Bread

Sweet Potato Bread: An Ideal Recipe for Nutritious Breakfasts and Energy-Boosting Snacks

 

 

Ingredients (for 8–10 servings)

    • 2 large sweet potatoes or 3 medium
    • 4-5 bananas (not too ripe)
    • 8-10 organic eggs
    • 3 tablespoons coconut oil (liquid)
    • 1–2 tablespoons vanilla extract
    • 4 teaspoons cinnamon powder
    • 1 pinch nutmeg (optional)
    • 1½ cups chopped walnuts
    • 1 cup shredded coconut
    • 1 cup of almond flour
    • ¼ cup made from pure maple syrup
    • ¼ cup flaxseed flour (optional)
    • 1 teaspoon sea salt
    • Optional: raisins, grated carrot, or pieces of fruit (such as frozen pineapple)

 

Preparation

  • Cook the sweet potatoes: Steam the sweet potatoes until tender. Let them cool completely (they can be prepared in advance and stored with the skin on).
  • Preheat the oven: Preheat the oven to 180°C and prepare a large baking pan (approx. 22 x 35 cm) by greasing it with coconut oil or lining it with parchment paper.
  • Prepare the base: Mash the sweet potatoes and plantains in a large bowl until you have a smooth puree.
  • Add healthy fats: Add the liquid coconut oil and mix well until fully incorporated.
  • Beat the eggs: In another bowl, beat the eggs and add the vanilla, cinnamon, nutmeg, and salt.
  • Combining mixtures: Add the egg mixture to the sweet potato and plantain purée, stirring until well combined.
  • Add flour and texture: Add the almond flour and flaxseed meal (if using) and mix well until you have a smooth batter.
  • Add extras: Add the chopped walnuts and shredded coconut, folding them in gently to preserve the texture.
  • Baking: Pour the mixture into the pan and bake for about 45 minutes, or until a fork inserted into it comes out clean.
  • Chill and serve: Let it cool before cutting into portions. It can be served hot or cold, even with coconut milk or fresh fruit.
