Flaxseed and Date Muffins: An Ideal Recipe for a Healthy, Energy-Boosting Breakfast

 

Ingredients (for 8–10 muffins)

    • 1 organic egg
    • 1/3 cup molasses
    • 1 cup made with almond milk
    • 3/4 cup made from flaxseed flour
    • 1/2 teaspoon sea salt
    • 1 cup chopped dates
    • 1½ cups almond flour (or a mixture of almond flour and coconut flour)
    • 1 teaspoon of sodium bicarbonate
    • Optional: 1/2 teaspoon cinnamon powder
    • Optional: 1 teaspoon orange zest
    • Optional: 1 teaspoon vanilla extract

 

Preparation

  • Preheat the oven: Preheat the oven to 190°C and line the muffin tins with muffin cups or lightly grease them.
  • Mix the liquid ingredients: In a bowl, whisk together the egg, molasses, and almond milk until the mixture is smooth.
  • Mix dry ingredients: In another bowl, combine the flaxseed meal, almond flour (or almond-coconut blend), salt, and baking soda.
  • Combine the mixtures: Add the dry ingredients to the wet ingredients and mix until a smooth batter forms.
  • Add the dates: Add the chopped dates and any optional ingredients (cinnamon, vanilla, or orange zest) if desired.
  • Baking: Pour the mixture into the muffin tins and bake until golden brown and firm, approximately 15–20 minutes.
  • Chill and serve: Let it cool slightly before eating to enhance the texture and flavor.
