Elaboration Procedure

Preparation of the couscous: Cook the couscous according to the instructions on the package. Once ready, let it rest so that the grain absorbs all the moisture and becomes loose.

Preparation of the sofrito: In a frying pan, prepare a stir-fry with the finely chopped onion and peppers, using the extra virgin olive oil. Once poached, integrate this mixture with the couscous, let it cool and form small compact balls with your hands until you obtain the texture of a malleable dough.

Caramelization of the apple: Cut the apples into large wedges, keeping the skin on. Brown them over low heat in oil and, just before removing, drizzle with the rice syrup to achieve a perfect glaze.

Plate assembly: Place the couscous patty in the center of the plate, top with a generous portion of sauerkraut and accompany with the caramelized apple wedges.
