Organic chocolate and hazelnut cookies—the perfect snack for healthy, gluten-free treats
Ingredients (for 10–15 cookies)

- 130 g organic gluten-free flour (a blend of millet, rice, and quinoa in equal parts)
- 50 g ground hazelnuts
- 90 g organic brown sugar
- 1/2 package organic yeast without phosphate
- 70 g organic hazelnut butter
- 80 g chopped organic gluten-free chocolate
- 1 egg eco-friendly
- 1 pinch salt
Preparation
- Mix the dry ingredients: Place the gluten-free flour, ground hazelnuts, brown sugar, organic baking powder, and a pinch of salt in a bowl. Mix well.
- Add the egg: Add the whole egg and begin mixing the ingredients until a uniform mixture forms.
- Prepare the hazelnut purée: Mix the hazelnut purée with a small amount of water until it reaches a consistency similar to mild mustard.
- Combine the mixture: Add the hazelnut purée to the mixture and knead the dough until it has a smooth texture.
- Add the chocolate: Add the chopped organic chocolate and distribute it evenly throughout the batter.
- Shape the cookies: Shape the cookies with your hands or with a spoon, adjusting the size to your liking.
- Preheat the oven: Preheat the oven to 180°C with heat from above and below.
- Prepare the baking sheet: Line a baking sheet with parchment paper and arrange the cookies on it, leaving enough space between them to prevent them from sticking together while baking.
- Bake the cookies: Cook for 12 to 15 minutes at 180°C, until they are lightly browned on top but still soft on the inside.
- Allow to cool: Remove from the oven and let them rest on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.
