Organic Mountain-Style Fideuá: Suitable for people with celiac disease

 

Ingredients

    • 300 g of thin gluten-free noodles.

    • Organic Chicken Broth (amount needed to cover).

    • 250 g of lean meat or chicken chopped.

    • 1 onion chopped.

    • 1 green bell pepper diced.

    • 1 ripe tomato chopped and 3 tablespoons of homemade tomato sauce.

    • 2 cloves garlic finely chopped.

    • Extra virgin olive oil y salt.

    • A pinch of food coloring (certified gluten-free).

Step by Step

  • Preparing the Meat: Cut the lean meat or chicken into pieces. In a paella pan with a splash of oil, sauté the meat until browned. Remove and set aside.

  • The Basic Sofrito: In the same paella pan, add the garlic, onion, and bell pepper. Cook over low heat for about 10 minutes until the ingredients are well poached.

  • Incorporation of Tomatoes: Add the chopped ripe tomatoes and cook for another 10 minutes. At the same time, heat the organic chicken broth in a separate pot so that it's boiling when you add it.

  • A Blend of Flavors: Add the meat and the three tablespoons of homemade tomato sauce back to the sofrito, and cook everything together for a few more minutes.

  • Cooking the Noodles: Add the gluten-free noodles and stir briefly to lightly toast them. Pour in the hot broth, salt, and food coloring. Cook for approximately 10 minutes or until the noodles are cooked to perfection.

  • Rest: Turn off the heat and cover the paella pan. Let it rest for five minutes so the flavors can meld and the texture is just right before serving.
