This recipe combines the traditional technique of artisanal dough sachets with a Japanese-inspired filling rich in Umami.
The dough, made with whole wheat flour and first-press olive oil, provides a crunchy and healthy texture that perfectly envelops the sautéed shiitake and apple.
List of Ingredients
For the Artisan Dough (Integral Base):

350 gr of whole wheat flour.

150 ml of mineral water.

150 gr of extra virgin olive oil (cold pressed).

1 teaspoon of sea salt.

For the Shiitake-Apple Stuffing:

1/2 cabbage (cabbage) cut into julienne strips.

2 apples (preferably sour).
-
1 small onion.
-
250 gr of fresh shiitake mushrooms.

Final touch: Soy sauce and grated ginger juice.

For the Roasted Pepper and Walnut Sauce:

1 roasted red bell pepper.
-
100 gr of peeled walnuts.

1 tablespoon of rice vinegar and 1 tablespoon of rice syrup.

1/2 garlic clove and ginger juice.

Step-by-Step Preparation Guide

Elaboration of the dough: In a saucepan, slightly heat the water with the oil (without boiling). In a separate bowl, mix the whole wheat flour with the salt. Pour the liquid over the flour and knead briefly until a homogeneous texture is obtained. Let the dough rest covered.

Oriental stir-fry: Julienne the onion, cabbage, apple and mushrooms. Start by sautéing the onion and cabbage. When softened, add the apple and finally the shiitake mushrooms. Season with the soy sauce and ginger juice. Remove from the heat and let cool completely.

The Accompaniment Sauce: Process or mash all the sauce ingredients (bell pepper, walnuts, vinegar, garlic, syrup and ginger). Adjust the texture with a little water if necessary and adjust the salt or acidity according to your preference.

Assembly and Baking: Divide the dough into equal balls. Stretch each one into a circle, place a portion of filling in the center and close the edges upwards forming a «sachet» or bundle. Brush with olive oil and bake in the oven at 170ºC for 10-20 minutes, until golden brown and crispy.

Presentation: Serve the freshly baked farditos accompanied by a fresh green salad and the bell pepper and walnut sauce on the side.
