Homemade Bone Broth

Homemade bone broth: an ideal dish for strengthening the body in the fall and winter

 

Ingredients (for 4 persons)

  • 1 kg high-quality, organic bones (with meat, marrow, tendons, and joints, preferably from grass-fed animals)
  • 4 liters osmotic water or purified water
  • 2 tablespoons organic apple cider vinegar with the "mother"
  • 1 teaspoon natural sea salt (optional)

 

Optional for enhancing the flavor

  • 30 minutes pre-baking 180°C to brown the bones before cooking them

 

Preparation

  • Select the bones: Choose organic bones, preferably with marrow, cartilage, and tendons, as they add more collagen, minerals, and flavor to the broth.
  • Brown the bones: Place the bones on a baking sheet and bake for 30 minutes at 180°C to enhance the flavor of the broth. This step is optional, but highly recommended.
  • Prepare the pot: Place the bones in a large pot and add the purified water. Add the 2 tablespoons organic apple cider vinegar with the "mother" to facilitate the extraction of minerals and collagen.
  • Let stand: Keep the bones in the water for 20 to 30 minutes before lighting the fire. This process helps release the nutrients more effectively during cooking.
  • Bring to a boil: Heat over high heat until the water is boiling vigorously. As soon as it starts to boil, immediately reduce the heat to low to ensure gentle, slow cooking.
  • Remove impurities: During the first 2 hours, stir occasionally and skim off any foam and impurities that appear on the surface approximately every 20 minutes.
  • Slow cooking: Simmer the broth for the appropriate amount of time, depending on the type of bone used:
    • Veal: 48 hours
    • Chicken: 24 hours
    • Fish: 8 hours
  • Strain the broth: Once the cooking is complete, let it rest briefly and strain the liquid to remove bones and solid bits.
  • Store properly: Store the broth in the refrigerator for up to 5 days or freeze it in portions to preserve all its nutritional value.
