- 2 eggs
- 120 g of butter
- 250 g gluten-free flour
- 60 g oat flakes or oat bran
- 4–5 drops cardamom
- Ginger to taste
- Toasted sesame seeds (for coating)
Preparation
- Preheat the oven: Preheat the oven to 180°C to ensure that the cookies bake evenly.
- Grind the seeds: Place the flaxseeds in a food processor, Thermomix, or powerful blender and blend for a few seconds until they reach a fine texture.
- Beat the wet ingredients: Add the eggs, brown sugar, and butter to a large bowl. Beat until the mixture is creamy and smooth.
- Blend the flavors: Add the rolled oats, ginger, and cardamom. Mix well to combine all the ingredients.
- Add the flour: Gradually add the gluten-free flour and stir until a smooth dough forms. Finish by gently mixing with a spatula if necessary.
- Shape the cookies: Form the dough into small balls, flatten them slightly, and, if desired, roll them in toasted sesame seeds.
- Baking: Place the cookies, spaced apart, on a baking sheet lined with parchment paper and bake for approximately 15 minutes at 180°C, until they are lightly browned.
- Allow to cool: Remove from the oven and let it rest for a few minutes before serving.
