Banana and almond waffle

Banana and almond waffles, an ideal recipe for healthy family breakfasts and snacks

 

Ingredients (for 4 persons)

    • 1 cup of almond flour
    • ½ cup coconut flour
    • ½ cup of brown rice flour (optional)
    • ¼ cup amaranth or tapioca flour (optional)
    • ¼ cup of ground flax seeds
    • ½ teaspoon sea salt
    • 4 organic eggs (egg whites and yolks separated)
    • 2-3 ripe bananas (mashed)
    • 1-2 cups of almond, hemp, hazelnut or rice milk
    • 1 tablespoon honey or maple syrup
    • 1 tablespoon of sunflower oil, grapeseed or liquid coconut oil

 

Optional for topping:

  • Chopped raw nuts
  • Red berries
  • Sliced banana
  • Maple syrup or berry syrup

 

Preparation

  • Preheat the waffle iron: Heat the waffle iron while preparing the batter to ensure even cooking.
  • Mix dry ingredients: In a large bowl, combine all the flours, ground flaxseeds and sea salt.
  • Add wet ingredients: Add the egg yolks, vegetable milk, oil and the chosen sweetener. Mix until a homogeneous dough is obtained.
  • Whip the egg whites: Whip the egg whites until stiff and airy.
  • Gently integrate: Add the whipped egg whites to the mixture with wrapping motions, without over whipping, to maintain the light texture of the waffle.
  • Cook the waffles: Pour the mixture into the hot waffle iron and cook until golden brown and crispy on the outside.
  • Prepare the berry syrup (optional): Heating 2 cups of berries in a saucepan over medium heat until boiling. Reduce heat and cook until thickened. Add 1 tablespoon vanilla and sweetener to taste.
  • Serve: Serve the waffles with fresh fruits, nuts and maple or berry syrup.
