{"id":992551,"date":"2018-06-14T00:00:00","date_gmt":"2018-06-14T00:00:00","guid":{"rendered":"https:\/\/quiropractica1.com\/receta\/tarta-de-zanahoria-mataro\/"},"modified":"2026-05-19T18:14:27","modified_gmt":"2026-05-19T16:14:27","slug":"tarta-de-zanahoria-mataro","status":"publish","type":"receta","link":"https:\/\/quiropractica1.com\/en\/receta\/tarta-de-zanahoria-mataro\/","title":{"rendered":"Healthy carrot cake"},"content":{"rendered":"<div class=\"vgblk-rw-wrapper limit-wrapper\">\n<h2>Healthy carrot cake with cream cheese, an ideal dessert for autumn and special celebrations.<\/h2>\n<p>&nbsp;<\/p>\n<h3>Ingredients (for 12 persons)<\/h3>\n<p>&nbsp;<\/p>\n<h4>For the cake<\/h4>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li><strong>350 g<\/strong> of clean carrots<\/li>\n<li><strong>3 eggs<\/strong> medium<\/li>\n<li><strong>200 g<\/strong> sugar<\/li>\n<li><strong>1 teaspoon<\/strong> vanilla essence or vanilla flavor<\/li>\n<li><strong>175 g<\/strong> of coconut oil<\/li>\n<li><strong>350 g<\/strong> of cornstarch flour<\/li>\n<li><strong>16 g<\/strong> of baking powder<\/li>\n<li><strong>2 teaspoons<\/strong> of sodium bicarbonate<\/li>\n<li><strong>2 teaspoons<\/strong> cinnamon powder<\/li>\n<li><strong>1 teaspoon<\/strong> of powdered or freshly grated ginger<\/li>\n<li><strong>30 g<\/strong> raisins or candied fruit (optional)<\/li>\n<li><strong>30 g<\/strong> chopped walnuts (optional)<\/li>\n<li><strong>1 pinch<\/strong> salt<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h4>For the filling<\/h4>\n<ul>\n<li style=\"list-style-type: none;\">\n<ul>\n<li><strong>50 g<\/strong> of butter at room temperature<\/li>\n<li><strong>350 g<\/strong> of powdered sugar (you can reduce the amount to taste or substitute sweetener)<\/li>\n<li><strong>1 teaspoon<\/strong> of lemon juice<\/li>\n<li><strong>150 g<\/strong> cream cheese spread<\/li>\n<li>Cinnamon powder for garnish (optional)<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<h3><\/h3>\n<p>&nbsp;<\/p>\n<h3>Preparation<\/h3>\n<ul>\n<li><strong>Prepare the carrots:<\/strong> Place the peeled and chopped carrots in the Thermomix mixing bowl and puree for <strong>8 seconds at speed 5<\/strong>. Reserve.<\/li>\n<li><strong>Whisk the liquid ingredients:<\/strong> Add the eggs, sugar and vanilla. Mix during <strong>30 seconds at speed 5<\/strong> until a homogeneous mixture is obtained.<\/li>\n<li><strong>Add the oil and carrots:<\/strong> Add the coconut oil and the reserved carrots. Mix during <strong>5 seconds at speed 4<\/strong>.<\/li>\n<li><strong>Add the dry ingredients:<\/strong> Add the flour, baking powder, baking soda, cinnamon, ginger, raisins, walnuts and pinch of salt. Mix during <strong>3 seconds at speed 6<\/strong>.<\/li>\n<li><strong>Prepare the baking:<\/strong> Pour the dough into <strong>two previously greased molds<\/strong> or in a single large pan if you prefer a taller cake.<\/li>\n<li><strong>Bake the cake:<\/strong> Bake in a preheated oven at <strong>170-180\u00b0C<\/strong> with heat up and down during <strong>35 to 45 minutes<\/strong> if you use two molds, or between <strong>60 and 70 minutes<\/strong> if you bake in a single pan.<\/li>\n<li><strong>Check for doneness:<\/strong> Insert a skewer in the center of the cake. If it comes out clean and dry, the cake is ready.<\/li>\n<li><strong>Allow to cool:<\/strong> Remove from the oven and let cool completely on a wire rack before unmolding.<\/li>\n<li><strong>Prepare the stuffing:<\/strong> Place all the filling ingredients in the Thermomix mixing bowl and mix for a few seconds. <strong>20 seconds at speed 4<\/strong> until a smooth and creamy cream is obtained.<\/li>\n<li><strong>Assemble the cake:<\/strong> Place a sponge cake base, spread half of the cream and cover with the second layer.
