If you have decided on your own to stop eating gluten or if your doctor told you to give up gluten, there is a learning period you must go through before your diet is truly gluten-free. This learning period may last a couple of weeks, so do not give up on any mistakes you make during this initial time frame.

There are obvious foods that contain gluten and other foods that are not so obvious.

• Battered foods

• Pasta

• Cakes

• Noodles

• Couscous

• Crackers

• Sweet desserts made with wheat (cakes, cookies, pastries)

Little-known foods that contain gluten

It is the little-known foods that contain gluten that can sabotage a gluten-free diet.

• Alcoholic beverages (beer of all kinds, liquor made from cereals such as vodka, gin, whiskey)

• Ice cream

• Hot chocolate

• Foods that contain malt

• Processed meats like salami, sausages, cold cuts, pâtés

• Root beer

• Foods that have cereal extracts in them

• Nutritional supplements that contain wheat, such as ceramide products

Broth cubes

• Foods that contain modified starch

• Worcestershire sauce

• MSG (Monosodium Glutamate)

• Wafers

Beauty products that contain hydrolyzed gluten

• Pickles

• Soy sauce

• Blue cheese

• Sauce

• Potato chips

• Spelt

• Barley

• Rye

• Oats

These cereals may not contain gluten in them but botanically are too close to the structure of wheat and should also be eliminated in a gluten-free diet:

  • Millet • Teff • Sorghum • Triticale • Einkorn wheat • Amaranth • Quinoa

 

There are other types of foods, preservatives, and ingredients

that are found in foods that can also become problematic in a gluten-free diet. Here is a list of them:

  • Hydrolyzed vegetable protein
  • Maltodextrin (may be made from wheat)
  • Natural flavors and colorings
  • Vegetable protein
  • Carob gum
  • Starch such as hydrolyzed starch and modified starch
  • Textured vegetable protein,
  • MSG (Monosodium Glutamate),
  • Dip mixes,
  • Salad dressings,
  • Baking powder,
  • Nuts roasted with honey or just roasted,
  • Instant teas and coffees,
  • Chocolate (often has malt flavoring),
  • Canned soups,
  • Candies that are coated with wheat flour.

Checking food labels is especially important when starting this type of diet for the first time. Depending on the degree of gluten allergy, even the smallest amount of gluten can trigger immune reactions that will make you feel very unwell.

One of the most important things to learn in a gluten-free diet is that the easiest way to do it is to cook your own food.

Meals are simple and contain proteins from cooked foods, half the plate with vegetables, and a fruit for dessert. Some people may tolerate rice; however, many types of rice are genetically modified and it would probably be better to leave them out of this type of diet.

Some people benefit more by gradually introducing themselves to this diet. The way to do this is to first choose one category of foods – beverages, cereals, breads, desserts, vegetables, fruits, nuts, salad dressings, sauces, and meat juices, and everything else. Then you review all the foods in your diet in that category and go to the store to find suitable substitutes.

After mastering the changes of this diet for a few days, add another category and do the same again. Repeat until you have completed the process. This method can be a good way to eliminate wheat gluten as consumption affects the opioid receptors in the brain. Many people may experience withdrawal symptoms.

Therefore, gluten addiction can make it exceptionally difficult for a week. One thing you should know is that in the last decade thousands of people have successfully given up wheat, cereals, and gluten. They have not suffered from malnutrition.

What really happens is that your health improves. Cereals have an anti-nutrient effect on the body, meaning they interfere with the absorption of iron, zinc, chromium, and other minerals.
